Watermelon is a fat burner and delicious in a salad

Watermelon and fennel salad with halloumi

You need this for 2 people:

1 fennel bulb with greens; 1 red onion; half of a medium watermelon; 1 pack of halloumi; handful of pine nuts; 4 tablespoons of olive oil; 2 tablespoons of vinegar; 1 tablespoon of honey; salt and pepper.

This is how you make it:

  1. Make the dressing by mixing oil, vinegar, honey and salt and pepper to taste.
  2. Cut the fennel into thin strips and let it marinate in the dressing for half an hour.
  3. Gently toast the pine nuts in a dry pan until lightly browned.
  4. Cut the onion into thin rings and the watermelon into large dice.
  5. Cut the halloumi into slices of half a centimeter thick and fry them in a frying pan until light brown.
  6. Meanwhile, divide the fennel and watermelon between two plates, garnish with the onion rings, the pine nuts and the greens of the fennel. Place the halloumi on top and pour over the dressing.

Watermelons contain a lot of minerals like iron, potassium and sodium and rich in vitamins A , B6, and C. The latter is not only good for the immune system, but also ensures a beautiful skin. It reduces wrinkles and strengthens the connective tissue. In addition, potassium, together with the large amount of water, has a cleansing and flushing effect on the kidneys.
